Tindora (dondakay) steamed fry (healthy & yummy) in Andhra Style :
I just love Tindora(dondakaya) fry but as my diet is mostly less oil foods I don’t often cook desi fry’s since I had to use little more cooking oil than what I consume on daily basis to make it delicious but I saw this steamed fry on a curry point menu then I decided to recreate.
Guess what it is such a hit and tastes very yummy and much less cooking time. Let’s jump into the recipe
Ingredients : Serves 2
1 lb Tindora
1 tsp Salt
1 tsp Chilli powder
Few Curry leaves
1/2 tsp turmeric powder
For Tempering (1 tbsp oil , 1/2 tsp mustard seeds , 1/2 tsp cumin seeds , 1 tsp chana & urad dal, 3 crushed garlic cloves)
2 tbsp shredded fresh or dry coconut
Procedure :
Wash and slice the tindora
Steam chopped tindora in pot in a pot method till cooked (you should be able to break it easily with hands)
Heat a kadai or pan, Add oil once the oil is heated add mustard seeds
When the mustard seeds splutter add remaining ingredients under tempering and saute the till the dals are slightly browned.
Add steamed tindora , turmeric , salt
Saute for about 5 mins ,add chili powder saute foe 2 mins till the raw smell from chili powder goes away.
Add shredded coconut , adjust salt and spiciness according to your taste and turn off the flame
Enjoy it with Rice
